Pasta Con Pomodoro E Basilico:
This is my favourite recipe, because sometimes simplest of recipes can go seriously wrong. When we get chefs for interviews, I always ask them to make this simple tomato basil pasta, and that is enough for me to know if he has his Italian Sensibilities in place or not. It is also my favourite comfort food, the smell of the tomato sauce simmering with basil is one smell which can fill any one with warmth and all things good.

This dish is my favourite because it brings back great memories of when I prepared it for a very dear friend’s anniversary.

I am really fond of Chettinad flavors. I love the spicy, tangy, coconut-y, and sweet & sour balance, which is accompanied with a complexity and depth of flavours.

I love this recipe because it’s a top favourite snack that I managed to remodel into a healthier version. And I dare say, most kids can’t tell the difference between this and the real monty.

Junglee Gosht/Shikari Gosht:
This recipe belongs to the family of Raja Digvijay of Sailana. This is one of my favourite recipes because of its simplicity as the meat is neither boiled or fried. This recipe is a combination of a little bit of cooking medium, a whiff of red chilies, and mainly the flavour of the meat.
